Outside run + will work for ice cream

I got in 3.4 miles outside yesterday. I was going for 5, but I'm grateful for what I got in. :) It was a pretty day by the lake.


And not too slippery! I still kept it quite slow. I am going to say it was the snow and not my out-of-shape-ness. Back me up on this and we can keep being friends.


For once in my life, I wore the right thing. Thumb hole shirt = always the right thing. 


Franklin and I refueled (aka had dinner) with some vegan enchiladas. Black beans for my joints!


Also for my joints, I made kale soup. It's supposed to be my lunch all week, but we will see how long I can handle it. Not the most appetizing appearing stuff, thus no picture (and since I consider the above photo appetizing, you know the kale soup is truly questionable).

To top the day off, our heat was again not working. Naturally, I decided to go to the store for ice cream (did you think I was going to say a space heater?). It is a scientific fact that eating ice cream brings your internal temperature down, which makes the external temperature feel warmer. If you are reading this and are deciding whether or not to interview Frank for one of the 174 science-related jobs that he has applied for, please know that he did not confirm that scientific fact. But he will work for ice cream.

Do you eat kale? Any recipes to share? We use it in soups pretty frequently, but this batch doesn't look so delicious.

  1. Oh my gosh I LOVE KALE. And with the Garlic Tahini Dressing from whole foods, it's the BEST.

  5. I love kale!! I still haven't tried kale chips but dying to try it! Looked like a beautiful day at the lake! I always make my kale salad with tomatoes, corn, onions, with some vinegar and olive oil dressing.

    I would work for social contribution.

  7. I keep my runs on ice and snow very easy as well. No need to slip and bust my head. I normally just saute kale and add some garlic...I'm of the very simpleton type LOL.

  18. I lurked in the first comments, so i'm going to try and post this tahini dressing recipe I have. Haven't tried it, but it's from my clean eating people. Pretty much all of the recipes I've tried of theirs were tasty.

    Everyday Tahini Salad Dressing
    I like to keep a jar of this in the fridge at all times. It sets me up for success. Come home tired? Throw together whatever veggies you have on hand and poof! You have your meal.
    directions
    ingredients
    • 2 tablespoon tahini
    • 1 tablespoon. lemon juice
    • 1 tablespoon apple cider vinegar
    • 1-2 teaspoons honey depending on de-
    sired sweetness
    • 3 tablespoons water, or as needed
    • Hefty pinch of salt and pepper
    • 1 clove of garlic, finely minced
    • 1 tablespoon extra virgin olive oil
    • 1 tablespoon finely chopped chives
    Whisk together the tahini, lemon juice, vinegar, honey and water. Mix in the garlic, hearty pinch of salt and pepper and drizzle in the olive oil while whisking. Add more water if you prefer it thinner. Mix in the chives. Adjust to your taste and store in refrigerator in jar.
